Cooking/Recipe Thread

I thought we had one but could only find that B&Q BBQ thread the Saffers have. Apologies if we do.

Anyway, has anyone cooked much with salt cod? I love the stuff but having now cooked with it twice it always turns out too damn salty.

Did a lovely Spanish dish with chickpeas and salt cod this evening but my wife couldn’t even eat half and although I loved the flavour also had to give up eventually.

I got it from the fishmongers and put it in water for 2 hours before but still outrageously salty

2 hours isn’t nearly enough time, so I’m not surprised it was really salty. Ideally you should soak it in cold water for at least 24 hours before using, and change the water at least twice during this time.

Well you see, thats where i thought I might have got confused - the recipe says soak it for that long if it’s Bacalao but just for an hour if it’s home salted cod. I assumed the stuff I got from the fishmongers would be classed as home salted, obviously not!

Will be cooking mussels later this week, anyone got a good recipe?

I usually have onion, fennel, thyme and creme fraiche in there but fancy a change

Not a recipe (sorry) but a suggestion.

I once had thai green curry with mussels in a Cornish seaside pub and it was one of the best things I've ever put in my mouth.

Mussels marinière ( moules marinière) cooked with white whine.
I’ll had a shallot to this recipe and the wine should be a dry one, also to be eaten with French fries.

Totally agree. Moules au Cidre is fantastic. But not French cider. A good Hereford cider. Westons would be my choice.

An absolute belter of a quick but very tasty supper dish, shamelessly nicked from Nigel Slater.

Skin some good quality pork sausages (enough for 2 per person) and cut into bitesize pieces
Fry some white onion till soft and add the sausage bites with some Dijon and wholegrain mustard
finish with some double cream and serve with mash or spaghetti
