I marinated warthog ribs in garlic, ginger, chilli and sweet soy sauce [kepac manis]. Vacuum sealed them and pit them in a sous vide at 50 degrees for 7 hours.

Going to braai them after the Test Match.

If it isn't still raining.

I see on the menu of a new restaurant we are opening in Hermanus for the owner of a local brewery there, that they have warthog on the menu. If I recall its coated with an indigenous locally foraged product but I didn't ask the process. . I fell in love with warthog when I had it from the firepit in a resort in Botswana. They obviously did the whole crocodile, mopane worms etc. In a buffet. I tucked into the warthog and decided then and there that it was the finest meat on planet earth. It was the dinner under a boma with a firepit thing next to the river. We had just done the river cruise on those topless boats. I was wondering how I could do warthog in the Charcoal oven to make it really pop

Warthog needs a bit of Sweetness.

In the late 90's we were making a Chilli & chocolate gravy with Warthog loin. And then Jerepigo, clove and star ainaise caramelized onion with a bit of beef gravy going through it.

Both very very good.

I have been given a piece of lamb rump, so will do that and a sirloin. Bought asparagus from FLM at a great price. Will also braai that.

It has been more than a week without a braai. It has been raining or just freezing cold.

I'd recommend brick. Looks better, and means you can also expand it if you want to.

I've got some friends who made their own braai and ended up building a pizza oven on to the side afterwards.

The only thing I have against a brick braai is it's normally built against a wall and that only leaves space for two guys at a time, and you end up standing with your back towards the rest of the people. A firepit might be a better option if you decide to build with brick.

It can also be good when you taste a worsie from the grill or test the steak.

My oldest son braaied on saturday but fuck me , it suck. His meat was raw and taai.

Homer inspired me to braai tonight. Wont do prawns (never tried that) but will go with Spare ribs and chicken. time to chop wood.

Had a lekke braai on Saturday with saffa friends and another this weekend.

I think I've mentioned before that we tend to have really big braais, with extended family and friends. Many of the guys prefer to do their own meat. I get what you're saying about a free standing braai. Having a braai built in the middle of your back yard like at a resort can look a bit out of place though and the space it gives is still a bit limited unless you go for something very basic similar to the one in the image below.

I built a nice big fire pit on the plot, we just use a few grills propped up on stands and bricks, and move the coals around. After the braai we just chuck some wood on and it doubles as a nice bonfire. I have a small stainless steel braai that I use for when I braai for just me, the wife and the kids. I can move it around and put it where I want it, in the sun/shade/ a corner somewhere out of the wind/ under a roof when it rains, and its big enough for just us four.

Yesterday was such a depressing day with all the sport. All my teams lost even the vokken midgets in 7s., cricket against the Poms. Only MU won. So braai was uit like crow shite.
Well the fire is nearly right to throw a boere braai, chops and wors with braai broodjies (toast).

The beer is cold and the music lekker.

Boets honestly, don't spoil our braais with Cunterbury. We prefer Waikato Draughts with our braais.

Felt like chicken today so have a couple of spatchcock birds marinating in buttermilk and herbs right now. Will brush with peri peri chilli and garlic oil while they braai. Have some Douro red wine and floury Portugese rolls to continue the theme

I have decided to hand over the braai tongs.
My eldest has now got the responsibility of handling that.
He did some pork chops the other night and did a very good job. Making the fire through to the braai. Timed his chops and got it perfect.

New milestone.

We have been crazy busy at work so my new charcoal oven has become a fill in job. The good news is that it's finished bar fitting the handle. So hopefully from next weekend we will have it at home. It's been too long without.

Almost 8 months. It's just not the same without really .
